Chocolate Zucchini Cake

This is from one of my favorites, Mormon Essential Cookbook. It has a ton of awesome recipes for anyone. This is one of them and it helps use up my abundant supply of zucchini in the freezer. It was super yummy and has chocolate, really how can you go wrong? Enjoy!

Chocolate Zucchini Cake
1 c. vegetable oil
2 c. sugar
3 eggs
2 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. milk
3 (1 oz.) squares unsweetened baking chocolate
1 tbsp. vanilla
2 c. grated zucchini (drained of liquid)
Chocolate frosting
In a large bowl combine oil, sugar, and eggs.

In a separate bowl sift dry ingredients; add to first mixture.

Add milk and mix well.

Melt baking chocolate in the microwave for 20 seconds intervals, until just melted. Blend in chocolate and vanilla into batter.

Stir in zucchini.

Bake in greased 9x13 inch baking dish at 350 degrees for about 25 minutes. Cool and frost with chocolate frosting.

Makes 12 servings.
