Lighter-Than-Air Potato Rolls (Biscuits)

These were kind of an "oops!" recipe. It turned out great, just not what I was trying to make. Instead of rolls in the title, make it more of a biscuit. I was trying this recipe out for Thanksgiving tomorrow. I thought I would try it today and that way, if it didn't work out, I would still have the rest of today and tomorrow to get a good roll recipe. Which I now need! These say rolls, but it turned out a nice fluffy biscuit. It was delicious, but Joe said it best. If you add some gravy and sausage on top of these, it would make a great homemade biscuits and gravy. I'm thinking breakfast tomorrow. And you will shortly get a roll recipe as soon as I find one! Maybe this is breakfast for you tomorrow too!! Enjoy!

Lighter-Than-Air Potato Rolls (Biscuits)
1/2 c. instant potato flakes
1 tsp. sugar
2 tbsp. butter, softened
1/2 c. hot water
1/3 c. cold water
2 c. biscuit baking mix (I used Bisquick)
Stir together potato flakes, sugar, butter, and hot water. Stir in cold water and baking mix. Gently smooth dough into a ball on a floured surface; knead 8-10 times. Roll our into a 10x6 inch rectangle. Cut into 12 squares; arrange on an ungreased baking sheet. Bake at 450 degrees for about 10 minutes. Makes 1 dozen.
