Mint Chocolate Chip Cookies

I got this recipe from a Better Homes and Gardens magazine for December of 2010. It is also on www.bettycrocker.com/cookies. I have been so excited to make these. I love mint. I love chocolate. And I love cookies. What better mix? And they are green, so Jacob and I'm sure kids in general love them!! They are super easy, made with a cookie mix and taste homemade. Enjoy!

Mint Chocolate Chip Cookies
1 pouch Betty Crocker sugar cookie mix
1/2 c. (1 stick) butter or margarine, softened
1/4 to 1/2 tsp. mint extract
6-8 drops green food coloring
1 egg
1 c. creme De menthe baking chips
1 c. semi-sweet chocolate chunks
Mix cookie mix, butter, extract, food color and egg in bowl, until soft dough forms. Stir in creme De menthe baking chips and chocolate chunks. Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet. Bake at 350 degrees for 8-10 minutes. Cool 3 minutes; remove from cookie sheet to wire rack. Serve warm or cool completely. Store tightly covered at room temperature.

  1. Yum! Chocolate and mint just remind me of Christmas! Although, wouldn't they be fun on St. Patrick's Day! Have a wonderful Thanksgiving!! Love you!
