Potato Skins

We had these at Texas Roadhouse and HAD to make them. They are sooo easy and super yummy. We didn't use a recipe, so it is just made up and similar to many, I'm sure. Perfect for parties, appetizers, or just for fun! But since it is our own recipe, measurements aren't exactly spot on. So make it your own and use as much or as little as you want. Enjoy!
Potato Skins
6 potatoes
Crisco, if desired
Salt, if desired
2 c. cheddar cheese, shredded
8 strips bacon, cooked and crumbled
If Crisco and salt are used, rub Crisco all over potatoes and sprinkle salt on them. Cut a couple of holes in the potatoes and roll in foil and bake at 350 degrees for about 1 1/2 hours or until very tender and skins are crispy. After they are done, cut in half and then scoop out the insides so there is about 1/2 inch of potato left on the skin.

Then cut those in half so they are essentially quartered.

Then put them on a cookie sheet. Sprinkle on the cheddar cheese and then add the bacon on top.

Bake at 350 degrees for 15 minutes or until cheese is melted and they are heated through. Save the scooped out potatoes and use for mashed potatoes another time.
