School Meatloaf

I know, meatloaf has a terrible reputation. I didn't eat if for years because of a dream my sister had when we were little. But a while back, we decided to give it a try again. This is seriously so worth it. It is simple to make, quick, and yummy. My whole family loved it. And that is saying something, because they are picky! It is from The Worldwide Ward Cookbook: Secret Recipes. Enjoy!

School Meatloaf
1 1/2 lb. ground beef
1 slice bread, finely chopped
1 egg
1 small onion, chopped
1 tsp. salt
1/4 tsp. pepper
1/4 c. ketchup
1/2 c. whole milk or half and half
Sauce:
1/4 c. apple cider vinegar
2-4 tbsp. packed brown sugar
1/2 c. ketchup
In a large bowl, combine beef, bread, egg, onion, salt, pepper, ketchup, and milk or half-and-half.

Place into a loaf baking dish.

In a separate bowl, combine vinegar, brown sugar, and ketchup. Pour over top and sides of meatloaf.

Bake at 350 degrees for 60-75 minutes, or until done. You can double the sauce recipe and serve on the side of the meatloaf.

  2. I can't eat meat loaf because of Heather's dream either. That does look apetizing. We will have to try it!!
