Crockpot Jambalaya

This tasty little dish is one that I've had for a while, just haven't used that often. I don't know why, I love it, Joe loves it and Jacob loves it. Now, maybe a few of you can figure out that you also love it! Enjoy!

Crock pot Jambalaya
8 oz. chicken
8 oz. turkey kielbasa sausage halved length
1 (16 oz) pkg. frozen stir fry veggies
2 c. water
1 (14.5 oz) can diced tomatoes, undrained
1 (8 oz) pkg. Jambalaya rice mix
Cut chicken into strips. Place frozen veggies in a crock pot. Top with chicken and sausage. Add water, undrained tomatoes, and seasoning packet from rice if present. Cover and cook on high for 2 1/2 to 3 hours. Stir in rice. If cooking on low, turn to high and cover. Cook for 45 more minutes or until most of the liquid is absorbed or rice is tender. Makes 6 servings.
