White Chocolate and Butterscotch Cookies

Now, there are 2 things that my husband loves...butterscotch and white chocolate. Put these together in a cookie and you are his best friend! He had a rough day yesterday at work (something about spilling stuff all over his pants...not fun!) and I decided that these would be a nice little pick me up! They are from Lil Luna website. They turned out great and I love the almond extract in them. But I am biased, I love that stuff! I also cut the recipe in half. I used a small cookie scoop and got about 3 dozen cookies, so they make plenty! Enjoy!
White Chocolate and Butterscotch Cookies
1 c. sugar
1 c. brown sugar
1/2 c. butter (softened)
1/2 c. oil
2 eggs
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1 tsp. almond extract
3 cups flour
1/2 bag of butterscotch chips
1/2 bag of white chocolate chips
Cream together sugars, butter and oil in mixer. Add eggs and beat until fluffy. Add dry ingredients as well as vanilla and almond extract. Mix in chips. Bake at 350 for 7-8 minutes.
