Butterscotch Cookies

Joe's favorite type of dessert is anything with butterscotch So, yesterday, I was in a BAD mood.  Like, nothing was going right, just really, really moody.  And sometimes, that is taken out on the hubs.  Today went much better, but I was feeling really bad for putting that kind of a burden on Joe.  So I made him "apology cookies".  They have nothing but butterscotch in it and they were really good, and easy! So next time you need to say sorry, make something that is a favorite! In my case, these delicious butterscotch cookies! Enjoy!

Butterscotch cookies
1 pkg. white cake mix
1/3 c. butter, melted
1/4 c. packed dark brown sugar
2 large eggs
1 1/2 c. butterscotch chips
Place the cake mix, melted butter, brown sugar, and eggs in a large mixing bowl.  Mix with an electric mixer on low speed 1 minute or until blended.  Mix in the butterscotch chips with a wooden spoon.  Drop by tablespoonfuls, 2 inches apart on greased baking sheet.  Bake 10-13 minutes or until edges are firm and middle is just barely set when lightly touched.  Cool 1 minute on sheet, the remove cookies with spatula to wire racks to cool completely.
