Peanut Butter Cookies

I made these cookies for a mutual activity we had.  I was running late, and so the cookies had just come out of the oven and I had to pack them up and run.  But let me tell you, apparently, always bring warm cookies. They were a huge hit!  They were chewy and warm and delicious!  Enjoy!

Peanut Butter Cookies
Recipe by: Six Sisters Stuff
1 cup (2 sticks) butter
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 1/2 cups peanut butter (creamy or chunky)
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
Additional granulated sugar (for rolling cookie dough in) 
Mix butter, sugar and peanut butter together.  Add eggs, flour, baking soda and vanilla extract.  Roll dough into 1 inch (or a little larger) balls, roll in sugar, place on ungreased cookie sheet and use a fork to make a criss-cross design on top.
Bake at 350°F for about 12 minutes or until golden brown.
