Barbecue Chicken Salad

I've been on the hunt for healthier, but still yummy dinners.  I think this one really hit the spot.  It is from a cookbook, "Skinny-licious" by Shauna Evans.  It was an easy recipe and easily adapted.  Just what I needed.  Enjoy!

Barbecue Chicken Salad
2 lbs. chicken tenders
2 c. barbecue sauce
1 head of romaine lettuce, washed and chopped
1/2 c. chopped red peppers
1 c. chopped roma tomatoes
1/2 c. chopped red onion
1 can black beans, rinsed and drained
1 c. fresh corn kernels
corn tortilla strips (I left these off)
1 c. ranch dressing
Marinate chicken tenders in barbecue sauce for about 20 minutes.  Grill chicken on medium heat for about 6 minutes on each side, or until no longer pink.  IN a large bowl, toss lettuce, red pepper, tomatoes, onion, beans, and corn.  On a plate later salad, chicken and tortilla strips.  Serve with extra barbecue sauce and ranch dressing.
