Whole Wheat Pancakes

I'm trying to get better at eating better. This is my first attempt at making anything purely whole wheat. They turned out good, and will be made again! Joe said whole wheat has some getting used to, but I enjoyed these. Here's to a new, better start!

Whole Wheat Pancakes
2 c. whole wheat flour
1 tbsp. baking powder
2 tbsp. sugar
1 tsp. salt
2 c. water
2 eggs
1/4 c. vegetable oil
Mix dry ingredients. Beat egg, oil, and milk together until well blended. Pour into dry ingredients and stir just until moist. Drop onto hot oiled griddle. Cook until bubbles appear all over and edges are browned. Flip pancake over and cook other side. Don't turn pancake more than once and don't press pancake down.

    I love whole wheat - Use wheat berries and go and use your mom's wheat grinder, it makes all the difference in anything made with whole wheat! The pancakes look yummy, very fluffy for whole wheat, I'm impressed!!
