This is a classic that is done every year in my family during the New Year. This year, we weren't at home, so I had to make them, just so I had a taste of them. I can't go a year without eating this delicious casserole! It is perfect for any family gathering. Enjoy!
Funeral Potatoes
2 lbs. frozen hash browns (Southern Style)
1/2 c. melted butter
2 c. cheese
2 c. corn flakes (crushed a little bit)
1 1/2 c. sour cream
1 c. cream of chicken
A little more butter (about 2 tbsp.)
Mix all ingredients but flakes and a little bit more butter. Melt butter and and coat flakes. Pour potato mixture into a greased 9x13 pan. Sprinkle flakes over the top. Bake 50 minutes at 350 degrees. *Can also be refrigerated for a few days prior to cooking it.
