Cinnamon Zucchini Bread

Best. Bread. Ever! My mom gave me this recipe, which she got from the prepared pantry. I brought this to a relief society retreat that I went to and it was a hit! It is moist, and oh so yummy! And a good use for your zucchini!
Cinnamon Zucchini Bread
3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
3 eggs
2 c. sugar
1 tsp. vanilla
1/2 c. sour cream
1 c. oil
2 c. zucchini, shredded and drained/squeezed of liquid
1 1/2 c. cinnamon chips
Mix together the dry ingredients in a mixing bowl. Add in the eggs, vanilla, and sugar. Mix well. Then FOLD in the sour cream, oil, and zucchini. Just mix until moist. DO NOT OVER MIX! Then stir in the cinnamon chips. Put batter into greased loaf pans. Bake for 55-65 minutes, or until done in a 350 degree oven.
