If you are like us, you planted WAY too many onions. We have gotten about 7 out of our garden the size of softballs. And we have more waiting for us out there. I have frozen 3 of them and have 4 more waiting for me. So I decided to do something different with them. Instead of freezing them, I dried them. It was super easy but it took a while and stunk up our house. Bad. Luckily, the smell is almost gone and I have nicely dried onions. Just as an FYI, the prefered temperature to dry is 145 degrees, but our oven didn't go down that low. So, I just put it the lowest it would go and dried them at that. Mine was 170 and it worked like a charm! Hope you enjoy!
Dried OnionsChop up onions to desired size. Lay out on a cookie sheet in one layer. Set oven to lowest set temperature, or 145 degrees. Let dry until onion flakes are crisp. It took about 6 1/2 hours. Add to soups, stew or anything that calls for onions. Can crush up to powder if desired.
I love onions, but I don't like the way the make my house smell when I'm drying them. I actually put the dryer in the garage!! I've been drying tomatoes in my oven today - I put garlic, olive oil, salt and pepper on them and they smell up my house to high heaven!! I should have put them in the dryer in the garage!
