I've had this recipe to put on here for about 3 days! Our computers crashed and we just now got them back! Man, I do a lot on computers!! But I'm back! This is a freezer recipe that you can eat when you make it or stick it in a gallon Ziploc bag and freeze! I got it from Girlfriends on the Go. It was super yummy and easy to make! Enjoy! Oh, and look back later for another recipe that I am doing for dinner tonight!
Tortilla Soup
1 can refried beans
1 can black beans, drained and rinsed
1 can chicken broth
1 1/2 c. frozen corn
3/4 c. chunky salsa
1 1/2 c.cooked chicken, cubed
1/2 c. water
2 c. shredded cheddar cheese
Tortilla Chips
Dollop of sour cream
Combine all ingredients except for the cheese, chips, and sour cream. If freezing, see directions below. Otherwise, simmer for 30 minutes. Crush tortilla chips in the bottom of the bowls. Add soup and top with sour cream and cheese. FREEZING DIRECTIONS: Place in a gallon-size freezer bag and freeze.
This looks like a recipe that I need to try...right away!! We are going camping this weekend, this would be perfect for a quick supper! Bob's not a big fan of taco soup, but I think he would love this one - thank you so much for sharing! Love you.
