Banana Streusal Muffins

Don't be surprised when you eat one of these and never eat anything else banana ever. These are AMAZING!!! I love banana bread, but sometimes it is nice to have a twist on things like that. These are moist, cinnamon-y and perfect! It came from the blog Sisters Stuff. Enjoy!

Banana Streusal Muffins
1 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 mashed bananas
3/4 c. white sugar
1 egg
1/3 c. melted butter
1/2 c. chopped nuts (optional)
Topping:
1/3 c. brown sugar
2 tbsp. flour
1/8 tsp. cinnamon
1 tbsp. butter
Preheat oven to 375 degrees. Fill muffin tins with cupcake holders or spray with cooking spray. Mix flour, baking soda, baking powder, and salt.

Then add bananas, sugar, egg, melted butter and nuts.

Spoon batter into muffin cups.

In a small bowl, mix together brown sugar, 2 tbsp. flour, cinnamon. Cut in 1 tbsp. butter until it resembles coarse corn meal. Sprinkle over batter.

Bake in preheated oven for 15-20 minutes, until a toothpick inserted comes out clean.

  1. Hi Val!

They look heavenly! I do love banana bread, especially your mom's recipe, but these muffins look so good. Of course, anything covered with brown sugar and cooked until golden brown has to be delightful!! Love you!
