Basic Zucchini Bread

I made this little number for our book club gathering we had. It turned out really yummy and good. It was really thick though. But still good. Everyone loved it and the best part...it made my house smell delicious! It came from my 101 things to do with zucchini (which is an excellent resource if you seem to still have an abundance of it in the freezer!) Enjoy!

Basic Zucchini Bread
3 eggs
1 c. oil
1 1/2 c. brown sugar
2 c. zucchini
3 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. vanilla
3 c. flour
1/2 c. chopped nuts, coconut, chocolate chips or dates (optional)
Preheat oven to 350 degrees. Spray two 9x5 inch loaf pans with cooking spray. In a large bowl, mix all ingredients until well blended. Add any additional ingredients and mix. Bake 60 minutes, or until a skewer inserted in the center comes out clean. Makes 2 loaves.
