Slow Roasted Whole Chicken
Get the whole chicken out of the freezer the night before and place in sink or tub. Make sure it is thawed out. Pull all the inners out from the center of the chicken. This can only be done if it is completely thawed out. At this point, you can take the skin off before you cook it, or take the skin off after it is cooked. For me, it didn't really matter. Place it in the crock pot. Add about 1 cup of water to the pot.
Turn on crock pot on to low and let cook for 10-12 hours. After it is done, take out let it cool for a little bit so that when you start to shred it, it doesn't burn you.
Start taking the meat off of the bones and shred into a bowl. Put the bones into a separate bowl. After all of the meat is shredded set aside. Strain juice from the crockpot in a mesh strainer so to get all of the extras out of the broth.
Either use the shredded chicken or measure out and put into freezer baggies. Let all of the air out and freeze for a later day. Do the same to the broth. Measure out and put into baggies. Lay flat on a cookie sheet and freeze that way so that is doesn't freeze funny. Enjoy tender meat!!
