Big Beth's Cream Cheese Frosting

This is the frosting that went on my birthday cake. My beautiful red velvet cake (recipe above!) Both recipes came from the same cookbook. It is the Worldwide Ward Cookbook Secret Recipes. My parents gave it to me for my birthday and I quickly put it to use. This frosting is AMAZING! My husband HATES frosting. Like, loathes it. He will scrape it off and give it to Jacob or just not eat the cake. He scarfed this! That's how you know it was a hit! If your frosting hating husband is sneaking the cream cheese frosting from the bowl. I will chalk this one up to a success. Hopefully you can too! Enjoy!
Big Beth's Cream Cheese Frosting
1/2 c. butter, softened
2 8 oz. pkgs. cream cheese, softened
1 tsp. vanilla extract
3 c. powdered sugar, sifted
In a medium bowl, cream butter and cream cheese until creamy. Mix in the vanilla, then gradually stir in powdered sugar. Store in the refrigerator. VARIATION: Add 1/3 cup cocoa powder to make chocolate cream cheese frosting. This recipe is also easily halved if this is too much. Makes 24 servings.
