Slow Cooker French Dip Sandwiches

Wow! This really hit the spot for me today! It was so good and perfectly juicy and not much work at all. Which I love! It is from Our Best Bits cookbook. Fabulous cookbook by the way. Check it out if you haven't. Enjoy!

Slow Cooker French Dip Sandwiches
1 roast
2 pkgs. dry onion soup mix
2 c. water
2 cans (14.5 oz) beef broth
1 pkg. sliced Swiss cheese
Crust buns or rolls
Put roast in slow cooker. Sprinkle onion soup mix over the roast and add water and beef broth. Cook on high for 4-6 hours or low for 8-10 hours. When the meat shreds easily with a fork, shred and the entire roast. Serve on sliced rolls with a slice of cheese. Serve the juices from the slow cooker as Au jus for dipping.
