I made meatballs a while back and froze the rest of them that I didn't use. I've been meaning to use them in something and found this recipe and it seemed perfect! I got the recipe from www.gourmetmomonthego.com. It is a great website with some awesome recipe. This one is no exception. I've never used Mascapone cheese before, but I really like it. It is described as Italian Cream cheese. Don't be afraid of it. It is very tasty and creamy! Enjoy!
Spaghetti and Meatball Pie
6 oz. uncooked spaghetti
2 tbsp. butter
1/3 c. grated Parmesan cheese
2 eggs, lightly beaten
8 oz. mascarpone cheese
16 meatballs, thawed and cut in half
1 1/2 c. Marinara sauce
1/2 c. shredded mozzarella cheese
Salt and pepper to taste
Preheat oven to 350 degrees. Cook the spaghetti and drain. Return to pot and add eggs, Parmesan cheese, butter, and salt and pepper. Mix well.
Place pasta mixture in greased pie pan, pressing down slightly to form a "Crust".
Spread mascarpone cheese over pasta and top with meatballs.
Pour marinara sauce over meatballs and sprinkle with mozzarella cheese.
Cover with foil (Spray foil with cooking spray to avoid sticking) and bake for 20-25 minutes. Remove from oven, let sit for 5-10 minutes, and then cut into slices and serve.
