Rolo Cookies

My absolute favorite thing ever! These kind of go back a ways for me. When my oldest sister was in college, I was in early high school (I think). She would come home for weekends and while she studied for her humanities class (classical music, to be exact) she would make rolo cookies and I would quiz her. I cannot eat these cookies without thinking about that. And not to mention that once I got to that class, I already knew most of the things that we were learning. Thanks Heather!! Any who, here is the recipe. SO easy, anyone can do it and it is perfect for any occasion! Enjoy!

Rolo Cookies
1 box Devil's Food cake mix
2 eggs
1/3 c. oil
about 30 rolos, unwrapped
Mix the first 3 ingredients together.

Roll into little balls (kind of like a nest). Do as little dough as possible so the dough to rolo ratio is higher. It makes them so much tastier!

Put one rolo in the center.

Wrap the dough around the rolo and roll into a ball and put on cookie sheet.

Bake at 350 degrees for 9 minutes. Makes about 30 cookies.

  1. Ah, this takes me back. You forgot to mention that we also used to lip sync to all the opera songs. There must be something about baking while memorizing, because I still remember most of that stuff. Thanks for posting the recipe!
