It was one of those nights. I just needed something. This was it. Seriously, it hit the spot. Mmmm...Betty Crocker is a genius. If you notice, on my blog, there have been a plethora of "cake mix" recipes. I have a food storage that consists of about 25 boxes of cake mixes. I really want to use my storage and not let it go to waste, so I am making a lot of things using a cake mix. Hopefully this helps anyone in the same situation. Enjoy!
Chocolate Chip and Peanut Butter Cookies
1 box yellow cake mix
1 1/4 c. crunchy peanut butter
1/4 c. brown sugar, packed
1/4 c. butter, softened
2 eggs
1 bag chocolate chips (2 cups)
Heat oven to 350 degrees ( 325 degrees for dark or nonstick cookie sheets). In large bowl, beat cake mix, peanut butter, brown sugar, butter, and eggs on medium speed until well blended. Stir in chocolate chips. On ungreased cookie sheet, drop dough by rounded tablespoonfuls 2 inches apart. Bake 9-11 minutes or until edges are set (centers will be soft). Cool 1 minute; remove from cookie sheets to cooling racks.
