Buffalo Chicken Sandwiches

I'm not usually a buffalo, spicy kind of gal.  It just doesn't suit me very well.  I would rather have mild things than anything else.  Joe on the other hand, LOVES spicy. And when I found this recipe, I wanted to try it!  It is so easily adjusted for tastes.  I cut the amount of sauce in half and then let Joe add what he wanted to his.  It worked perfectly and I had a chicken sandwich that had a little kick to it, and Joe was able to have his sandwich that had a punch to it! Also, I like celery and onions. Joe, not so much.  So I also diced up some of those and added some to mine only.  It adds such a nice crunch and taste!  But all of this is easily put in or out, depending on what you want.  The picture below is my sandwich, which means it doesn't have as much buffalo sauce.  So if you put what is called for, it will be more of an orange color. It is great either way!  Enjoy!

Buffalo Chicken Sandwiches
Recipe by: Six Sisters' Stuff
2 cups chicken, cooked and shredded (I used a rotisserie chicken)
1/2 cup ranch dressing
1/4 cup hot buffalo wing sauce (I used Frank’s RedHot sauce)
4 oz cream cheese, softened
2 celery stalks, finely diced
1/4 cup onion, finely diced
1/4 teaspoon garlic powder
salt and pepper to taste
buns

In a large bowl, mix together chicken, ranch dressing, buffalo sauce, cream cheese, celery, onion and garlic powder. Add salt and pepper as needed. Serve on buns and top with your favorite sandwich fixings (such as tomatoes, cheese, lettuce, pickles, etc). Store leftovers in a covered container in the fridge.
