We are huge fans of chicken parmesan at this house. I am always looking for new recipes for it. For me, this is one dish where I don't have an absolute favorite recipe for it. There isn't one recipe that I just HAVE to make every time I make chicken parmesan. I just loving trying out new ones. So this was a must when I saw it in the Six Sisters' Stuff "A Year With..." cookbook. It was so yummy! I loved the different taste of using croutons instead of regular bread crumbs. Same thing, I am aware, but with the croutons, it brought a different taste that was super good! Enjoy!
Crispy Chicken Parmesan
Recipe by: A Year With Six Sisters' Stuff Cookbook
2 c. Cheese and Garlic croutons
1 egg, beaten
4 skinless, boneless chicken breasts
1 c. marinara sauce, heated
1/4 c. shredded mozzarella cheese
Preheat oven to 375 degrees. Spray baking dish with cooking spray. Place croutons in plastic bag, close, and crush with a rolling pin. (**Side note, I didn't use the rolling pin method. I just stuck my croutons in my food processor and zapped them that way. Done in seconds!**) Dredge chicken in egg and then coat in bread crumbs. Place chicken on prepared baking sheet. Spray chicken with cooking spray. Bake 20-30 minutes or until chicken is done. Spoon spaghetti sauce over chicken and sprinkle with cheese.
