Mini Garlic Monkey Bread

I made this to go with the last dish I posted, the Crispy Chicken Parmesan.  It was a perfect side dish and would go amazingly with just about any meal!  It is also from A Year With Six Sisters' Stuff.  They do 52 menus and this one actually went with the chicken parmesan!  That made dinner easy!  Enjoy!

Mini Garlic Monkey Bread
Recipe by: A Year With Six Sisters' Stuff Cookbook
2 (7.5 oz.) cans buttermilk biscuits
6 tbsp. butter, melted
4 cloves garlic, minced (I just used garlic salt, and it already had the parsley in it!)
2 tbsp. dried parsley
1/4 c. grated Parmesan cheese, plus more for sprinkling on top
Preheat oven to 400 degrees.  Lightly grease a 12 cup muffin tin with cooking spray.  Cut each biscuit into quarters and place into a bowl.  Combine butter, garlic, parsley, and 1/4 c. parmesan cheese.  Pour over biscuit pieces.  Gently toss together and make sure everything is evenly coated with the butter mixture.  Place 5-6 biscuit pieces in each muffin cup.  Sprinkle with additional parmesan cheese.  Bake 12-14 minutes or until golden.  Serve warm.
