Lemon Cheese Bars

Delicious! Really the only word to describe these. They are perfect and easy! The best combination if you ask me! It is from Cake Mix Fun for Kids. Makes for a good potluck or dessert that you need in a hurry! Enjoy!

Lemon Cheese Bars
1 pkg. white or yellow cake mix
2 eggs divided
1/3 c. vegetable oil
1 pkg. cream cheese
1/3 c. sugar
1 tsp. lemon juice
Preheat oven to 350 degrees. Combine cake mix, 1 egg and oil in large bowl; stir until crumbly. Reserve 1 cup crumb mixture. Press remaining crumb mixture into ungreased 13x9 inch baking pan. Bake 15 minutes or until light golden brown. Meanwhile, combine remaining egg, cream cheese, sugar and lemon juice in medium bowl; beat until smooth and well blended. Spread over baked crust. Sprinkle with reserved crumb mixture. Bake 15 minutes or until cream cheese layer is just set. Cool in pan on wire rack.

  1. Hi! I hope you don't think I'm creepy for reading your recipe blog, but I love the recipes! I'm Haley Jolley (used to be Haley Cripe) and we were in the same stake growing up.
    So I have a question for you: I made the meatball recipe just like you said, but it seemed like there was way too much sauce and I had to add a bunch of bread crumbs to even be able to roll them into balls. Is there maybe a typo on the sauce, or did I miss something? Other than that, I've tried several of your recipes and I really love them, so thanks for making this blog!
