Lasagna Soup

A while back, I found a recipe for Chicken Lasagna Soup and it sounded really good.  So i got all of the ingredients for it and was so excited to make it.  I also thought I had shredded chicken in the freezer.  I didn't.  Time came to make it (about 5 PM) and I discovered I had no chicken in there.  Dang.  Now what?  That looks really good.  I did find pre ground hamburger though.  It would definitely work the same right?  Totally!  It did and it was so yummy.  On this cold snowy day, it is perfect for a warm you up!  Enjoy!

Lasagna Soup

1lb hamburger
2 cups pasta of your choice
3 T. Parsley flakes
1/8 T. garlic powder
1 T. Basil
1 T black pepper
1 1/2 T kosher salt
8 oz tomato sauce
6 oz tomato paste
32 oz. beef stock

3 small tomatoes diced
8 oz cup Ricotta cheese
6 oz fresh parmesan cheese
8 oz fresh mozzarella cheese

Brown the hamburger in a pot until cook and no longer pink.  Next add all the spices, the tomatoes, tomato paste, tomato sauce, pasta and chicken stock. Boil all of this together for about 12-15 minutes.Then dump all the cheeses and boil until they are fully melted. Stir often to help it melt evenly.
